Easy Summer Salsa's

I make fresh salsa (pico de gallo) all year round.
But there is something about this dish in the summer that makes it a
MEGA FAVORITE
around my house.

Maybe it's the fresh taste, the colors, or getting to use a corn chip to deliver something healthy to your mouth.
I think my favorite quality is in only a few minutes you can have a beautful, flavorful side dish or dip that everyone enjoys without heating up the house.

It's basically a fridge to bowl recipe.
I don't know!
Whatever the draw may be ... this dish is always a hit.

And the beauty is...

 If you can work a knife you can make these dips!
All you need is a nice sharp knife, fresh ingredients, (Ill list them for you below) and about 10-15 minutes!

That's all it takes!

I have two to share so let's take a look.

FRESH ROUGH CHOPPED SALSA


Here is what you will need!

3 Large Tomatoes {I used some huge Tennessee tomatoes}
Fresh Cilantro
Half of a Large Onion
Salt
Fresh Ground Black Pepper
Red Pepper Flakes
Chili Powder
1 Jalapeno seeded

Rough chop everything stir together. Then add spices to taste!
And there you have it...
Easy Summer Salsa! 

Serve with some 
Gluten Free Tostitos Blue Corn Chips
{Gluten Free and made with Certified Organic Corn}

FRESH BLACK BEAN AND CORN SALSA


Here is what you'll need...
1 Half a Red Onion coarsely chopped
1 Half Avocado cut into small cubes
2 Large Tomatoes cubed or several Romano Tomatoes cubed
1 Half Jalapeno seeded and minced
Handful of Fresh Cilantro rough chopped
Half a can of Nibblets Corn
Half a can of Black Beans washed and drained
1 Lime fresh squeezed or Lime Juice
1 Tablespoon of Sugar
Salt and Pepper to taste

1 Bag of Tostitos Scoops or Gluten Free Tortilla Chips

You can add Chili Powder, Fresh Garlic or Cayenne Powder to add an extra punch to your dip. This is a basic floor plan that you can modify and take to new heights. 
We made this a few weeks back and it's great even spooned onto Hot dogs!! mmmmm

My SIL {Sister-In-Law} made this one time and I feel in love with it right away.

So there you have it. Two savory summer salsa's that won't disappoint.
They are quick and easy to make and will only heat up your mouth during these sizzling hot summer months!

Here are some ways I've served this...
Serve as a side dish and let your family eat this as a side salad.
Use as a topping on Hamburgers and Hotdogs.
Add a little to the top of your black or pinto beans.
Serve with your Tacos.
Place some atop your rice.
Scoop with chips.
Melt cheese on nachos and garnish with salsa and serve during movie night!
Serve along side chips and your favorite gluten free beer!
